I have been seriously craving sugar cookies since Christmas. If not since several Christmases ago. It was the only cookie I couldn’t conceive of baking with my standard bean flour mix. It would ruin the lightness, the sweetness, the perfection that is a sugar cookie.
So, tonight, I fiddled with a few other flours and figured out how to make it! Whoo hoo! They came out perfect. Even Brett and his gluten-tainted tongue couldn’t tell the difference! YES!
I have already posted the recipe on Suite 101 for these delicious sugar cookies. I’m so psyched.
Sometimes the best part is just that the experiment paid off. Sometimes it’s eating the cookies!
